Zucchini Relish

This recipe was sent in by Carla. I made a smaller batch, halving all the quantities. She suggests starting with a cup less sugar since it tends to be sweeter without the salt that was in the original recipe and then tasting it and adding more if you want it sweeter.

10 c Zucchini,Chopped
4 c Onion,Chopped
2 c Red Bell Peppers,Chopped
2 c Green Bell Peppers,Chopped
2 1/2 c Vinegar
1 t Celery Seed
1/2 T Black Pepper
1 T Cornstarch
4 1/2 c Sugar

Course grind vegetables. Place in large nonmetallic bowl and let stand overnight. Next day drain and wash with clear water. Mix next five ingredients together in large pan. Add drained vegetables, bring to a boil and simmer 20 minutes. Put in sterile jars and seal in boiling water bath. Makes 8 pints.
