I used a George Foreman grill to grill the vegetables, but you could also use a regular grill or roast them in the oven.

Slice vegetables and spray with olive oil spray. Grill until crisp tender. Place a small amount of sauce in a 8x12 baking dish. Layer zucchini, eggplant, more sauce, onion and mushrooms. sauce, eggplant and zucchini. Top with remaining sauce and sprinkle with cheese.
