Tomato Chutney

Marti sent this recipe along. And it is very timely considering the number of tomatoes coming out of the garden. I haven't had a chance to make any yet, but it's on my list for this weekend. She says it's pretty spicy so you may want to adjust the number of jalapenos.

1 c Cider Vinegar
1/2 c Sugar
1 1/2 lb Cherry Tomatoes,Quartered
2 c Onions,Chopped
4 Jalapeno Peppers,Chopped
2 t Ginger
2 ea Garlic,Minced
1 t Cumin
1/2 t Cinnamon
1.2 c Golden Raisins

Combine vinegar & sugar in non-aluminum saucepan. Bring to a boil, stirring to dissolve sugar. Add remainder of ingredients. Bring to a boil, reduce heat and simmer 30 to 45 min. Or until most of the liquid has cooked off. Stir often to prevent sticking. Transfer to containers and freeze or hot water bath can for 15 min
