Tex-Mex Meatloaf

We love meatloaf and we love food with a Mexican flavor, so it's no surprise that this turned out to be a big hit around our house.

1 1/2 lb Ground Beef,Extra Lean
2 c kidney beans,Rinsed And Drained, Cooked Dried Or Canned No Salt
1/2 c Low Sodium Salsa
1 c onion,chopped
1/2 t garlic,minced
1/2 c bread crumbs,Low Sodium
2 eggs
1 1/2 t cumin,Ground
2 T brown sugar

Combine meat, beans, 1/2 of salsa, onion, garlic, bread crumbs, eggs, and cumin. Mix well. Press into a loaf shape on a broiler pan or roasting pan. Bake 1 hour at 350 degrees. Carefully pour off any drippings. Combine remaining salsa and brown sugar; mix well. Spread over top of meatloaf. Continue baking 15 minutes; remove and let stand 10 minutes.
