Sun-Dried Tomato Alfredo Sauce

I saw a jar of this on the supermarket shelf and decided to try to get creative and see if I could come up with something similar, but more healthy. I was quite happy with the way it turned out. By the way, my 1/3 cup serving size is bigger than the USDA's standard 1/4 serving of pasta sauce, but seems closer to what people are likely to really eat to me. I use the creamer in this to get more of a sense of thickness than skim milk would give. Reducing the cheese would cut the amount of sodium if this still seems a bit high to you.

2 c Non Fat,Non Diary Creamer
2 T Cornstarch
1/2 c Parmesan Cheese
1/2 c Sun Dried Tomatoes,Finely Chopped
1/2 t Garlic Powder
1/2 t Oregano

Shake creamer and cornstarch together in a jar. Place in saucepan. Cook and stir until thickened and beginning to boil. Add cheese and tomatoes and stir until cheese is melted.

Yield: 6 Servings
