Stuffed Banana Peppers

Another recipe that uses some excess peppers. The original recipe I used to develop this one called for frying, but I decided to make them in the oven instead to reduce the amount of fat, since the meat and cheese already have a significant amount. You could reduce the fat further by using ground turkey.

12 banana peppers,hot or sweet
1 lb Ground Beef
1 Onion,Finely Chopped
1/2 c Swiss Cheese,Shredded
1/4 t Black Pepper
1 Egg,Or 1/4 Cup Egg Substitute
1/4 c Flour

Wash and clean peppers, cut off top and small part of bottom of peppers. Sauté ground beef and onions until meat is no browned on surface. Stir in cheese. Stuff mixture into peppers. Whisk egg in bowl. Dip peppers in egg. Roll in flour, dip again and roll in flour again. Place in baking disk and spray surface with non-stick vegetable oil spray until flour in moistened. Bake in pre-heated 350 degree oven until cheese is melted and coating begins to brown, about 20 minutes.
