Spice Oatmeal Cookies

1 c raisins
1 c water
1/2 c Unsalted Butter,Softened
1/4 c vegetable oil
1 1/2 c Sugar
2 eggs
1 t vanilla extract
2 1/2 c Flour
1/2 t Sodium Free Baking Powder
1 t Sodium Free Baking Soda
2 t cinnamon
1/4 t nutmeg
2 c quick cooking oats
1/2 c walnuts,chopped

Preheat oven to 350 degrees. Simmer raisins and water in saucepan on low until plump, approx. 20 min. Drain liquid into measuring cup and add water to make 1/2 cup liquid. Cream butter, oil and sugar. Add eggs and vanilla. Stir in raisin liquid. Sift flour and spices, add to sugar mixture. Add oats, nuts and raisins. Drop by rounded teaspoonfuls onto ungreased baking sheet. Flatten slightly, then bake 8-10 min. or until slightly brown.
