Southwestern Chicken Breasts

These make a good meal with some spanish rice. The fat content listed is probably a little high since it assumes all the marinade is absorbed, but you will have some left to throw away. The recipe contains only 3 grams of carbohydrate.

----- Marinade =======================
1/3 c Oil
1/3 c Lime Juice
2 T Green Chilies,Chopped
1/4 t Garlic Powder
----- Chicken ========================
4 Boneless Skinless Chicken
-Breasts Halves
4 oz Swiss Cheese

In 9" square baking pan stir together all marinade ingredients. Add chicken breasts; marinate, turning once, in refrigerator at least 45 minutes. Remove chicken from marinade; drain. Grill or saute chicken 7 minutes; turn. Continue cooking until done, about 6 to 8 minutes. Top each chicken breast with a slice of cheese. Continue cooking until cheese begins to melt. Serve with salsa.
