Showing You How To Give Up Sodium Without Giving Up Your Life Southern California Rice This is kind of a leftover from our Baja issue, but it's good as a side dish with any meal.
2 T Olive Oil Heat the vegetable oil in a saucepan over medium heat. Add the onion, and cook until tender, stirring frequently. Stir in rice, and season with cumin and garlic powder. Cook and stir until the rice is lightly toasted, about 5 minutes. Pour in the chicken broth and the diced tomatoes. Bring to a boil, then cover and cook over low heat for 15 to 20 minutes, until all of the liquid has been absorbed.
