Snowy Day Breakfast Casserole


My wife came up with this one last week when we were snowed in. Just the sort of thing you need to sit in front of the fire with.

3 Potatoes,Shredded
1/2 Onion,Chopped
1/4 c Green Bell Peppers,Chopped
4 sl Low Sodium Bacon
1 c Egg Substitute
1/4 c Cheddar Cheese,Shredded

fry bacon in a large skillet. Drain. Add potatoes, onions and peppers and suate until potatoes are crispy and onion soft. Stir in crumbled bacon. Transfer to greased 8 inch square baking dish. Pour egg substitute over. Sprinkle with cheese. Bake at 350 until eggs are set, about 20 minutes.
