Snickerdoodles

These are my absolute favorite. I have to make a batch every year. Fortunately, this recipe makes a lot of cookies, since everyone else seems to like them too.

1 c Unsalted Butter
1 1/2 c Sugar
1/2 c Egg Substitute or 2 Large Eggs
1 t Vanilla
2 2/3 c Flour
2 t Cream Of Tartar
2 t Sodium Free Baking Soda
2 T Sugar
1 t Cinnamon

Cream butter until light. Add 1 1/2 cups of sugar and beat until fluffy. Beat in eggs and vanilla. Stir together flour, cream of tartar and baking soda. Add to beaten mixture. Stir together 2 tablespoons sugar and cinnamon. Shape dough into 1 inch balls. Roll in cinnamon sugar mixture. Place 2 inches apart on ungreased baking sheet. Bake at 400 for 8 to 10 minutes. Remove and cool on racks.
