Smoky Chicken Rub

I recently discovered smoked paprika. It is a wonderful to add a smoky flavor to food even if you aren't going to grill it. McCormick is now marketing it, so you should be able to find it in your local grocery store. This rub adds a great flavor to chicken, whether you grill, smoke, rotisserize or just oven roast it.

3 T Smoked Paprika
1 T Black Pepper,Fresh Ground
1 T Celery Seed
1 T Sugar
1 T Dry Mustard
1 T Onion Powder
1 12 t Poultry Seasoning
1 T Thyme

Combine all ingredients. mixing well. Store in an airtight container. Makes enough for 1 large roasting chicken or two small chickens.
