Skillet Pork Chops

Marti sent me this recipe as an example of a low sodium recipe that she created from an old family favorite. She used the K C Barbecue Sauce recipe on the Low Sodium Cooking site, no salt added beans and reduced sodium broth to lower the recipe from over 1000 mg of sodium to only . You can either use canned no salt added beans or cook your own dried ones. She used canned chilis and I substituted drieed ones. She suggests serving it with frozen O'Brien potatoes with no salt added.

6 Center Cut Pork Chops
1 T Olive Oil
1 c Onion,Chopped
2 ea Garlic,Minced
1/2 c Low Sodium Chicken Broth
1/2 c KC Barbecue Sauce
4 c No Salt Added Pinto Beans Drained
2 Jalapeno Peppers,Chopped

In a large skillet, sear pork chops in oil until brown, about 5 min. Remove pork chops and place on plate. Add onion and garlic to skillet; Cook ten min. Stir in broth, sauce, jalapenos and beans. Heat mixture to a boil. Return pork to skillet. Reduce heat; Cover and simmer 50 to 60 min, stirring sauce and turning chops occasionally until meat is fork-tender.
