Salsa Stew


Add some of your homemade salsa to this stew to give it a southwestern flavor. I prefer it cooked it the crockpot so the beef gets nice and tender, but you could simmer it on the stove just as easily. It goes well with cornbread.

1 1/2 Beef Chuck,Cubed
1 T Olive Oil
4 Potatoes,Cubed
1 Onion,Coarsely Chopped
1 Green Pepper,Coarsely Chopped
1 cn No Salt Added Tomatoes
1 c Salsa
2 ea Garlic,Chopped
1 t Cumin

Brown the beef cubes in the oil in a skillet or dutch oven. Combine beef with the remaining ingredients ina crockery cooker and cook on low for 8 to 9 hours.
