Real Fruit Fruitcake
This is another non-traditional fruit cake, full of dried fruits and premium nuts. If you want to avoid the alcohol, substitute apple juice or cider for the run and orange juice for the Triple Sec.
1/2 c Rum
Combine fruit and nuts in a large bowl. Pour rum and Triple Sec over, stirring to mix. Cover and allow to soak overnight to 24 hours, stirring occasionally. Cream together margarine and sugar. Add the eggs, orange peel and maple syrup and mix well. Combine the dry ingredients and stir into the batter. Add fruit and nut mixture and stir well. Preheat oven to 325 degrees. Grease two large loaf pans or 4 mini loaf pans. Spoon batter into pans, pressing down and leveling top. Bake until a knife inserted in the center come out clean, about an hour for mini pans or an hour and 20 minutes for regular pans.
