Quick Summer Squash

We've been looking for ways to use zucchini and yellow squash since the garden has started producing. This recipe is quick to fix and gives you just a little different taste.

1 lb Yellow Squash,Shredded
1 T Unsalted Butter
1 t Low Sodium Chicken Bouillon
1/2 t Garlic Powder
1/2 t Onion Powder
1 t Parsley
1/2 t Oregano

Place squash in a one quart casserole. Melt butter, stir in remaining ingredients. Stir to mix. Cover and microwave on high until crisp-tender, about 3-4 minutes, stirring once in the middle of the cooking time.

Yield: 4 Servings
