Pot Roast With Root Vegetables

This is a simple fall pot roast, featuring root vegetables and not containing a lot of added ingredients. Cooking it in a covered roasting pan will ensure that the meat is very tender.

2 lb Beef Bottom Round Roast
4 Potatoes,Quartered
4 Turnips,Peeled And Cut Into Quarters
6 Carrots,Sliced
1 Onion,Peeled And Quartered
1 Parsnips,Peeled And Sliced
2 c Low Sodium Beef Broth
2 c No Salt Added Tomatoes

Place all ingredients in large roasting pan. Cover and roast at 350 until vegetables are done and meat is tender, about 2 hours.
