Pie Filling Muffins

I've had a can of apple pie filling on the pantry shelf for a while and it seemed like it would work well for muffins. They turned out very moist and quite good. You could use other flavors of pie filling in place of the apple.

1 3/4 c flour
1/4 c sugar
3 t Sodium Free Baking Powder
2 eggs
1/4 c vegetable oil
3/4 c Skim Milk
3/4 cn Apple Pie Filling

Sift together flour, sugar and baking powder. Set aside. In another bowl, beat eggs until frothy. Stir in oil and milk. Stir together flour mixture and mix with wooden spoon only until moistened. If pieces of apple are large, break up before stirring pie filling into batter. Spoon batter into a 12-serving size greased or paper lined muffin pan, filling 2/3 full. Bake at 400 degrees for 25-30 minutes.
