North Carolina Barbecue Sauce

This sauce is similar to the ones found in eastern North Carolina. Based on vinegar and red pepper, it tends to be hot and sour, but if perfect for a pulled pork sandwich with cole slaw.

1/2 c Cider Vinegar
1/2 c White Vinegar
1 T Brown Sugar
1/2 T Cayenne
1/2 T Tabasco
1/2 t Black Pepper

Combine the white vinegar, cider vinegar, brown sugar, cayenne pepper, hot pepper sauce and pepper in a jar or bottle with a tight-fitting lid. Refrigerate for 1 to 2 days before using so that the flavors will blend. Shake occasionally, and store for up to 2 months in the refrigerator.
