Moroccan Couscous

A delicious side dish with a middle eastern flavor. Serve with grilled chicken for a great meal. Also can be served as a meatless main dish.

1 c onion,chopped
1 c carrots,sliced
1 c celery,sliced
1 c mushrooms,sliced
1/2 c Walnuts,chopped
2 T olive oil
2 c chickpeas,cooked and drained
8 oz no salt added tomato sauce
1/2 c raisins
2 t curry powder
1/4 t cayenne
1 t paprika
1 1/2 c water
1 c couscous

Vegetable mixture: In large pan, brown onion, carrots, celery, mushrooms, nuts in oil. Add next 6 ingredients, bring to boil, cover and simmer for 40 minutes. Couscous: Boil 1 1/2 cups water with 2 tablespoons oil. Pour over couscous, stir, cover, let stand for 5 minutes or until water is absorbed. Serve vegetables over steaming couscous.
