Moo Goo Gai Pan

This was sent in by Elizabeth. She was looking for Chinese dishes and with a little experimentation came up with this recipe for Moo Goo Gai Pan. We had it last week and it's a definite winner.

1 lb Boneless Chicken Breasts
2 T Cornstarch
1 Egg White
1 T Sherry
1/2 t White Pepper
2 T Water,Cold
8 oz Mushroom,Sliced
1 1/2 c Low Sodium Chicken Broth
1 T Ginger Root
1/4 c Scallion
1/4 c Celery
4 oz Snow Peas
8 Water Chestnuts
1 c Napa Cabbage
8 T Oil

In a bowl, combine the chicken, 1 tablespoon of the cornstarch, the egg white, dry sherry, pepper. Marinate at least 15 minutes. Simmer mushrooms in broth 15 minutes. Drain and reserve liquid. Simmer gingerroot in broth until ready to use. Mix remaining cornstarch with water. Shake well to thoroughly dissolve. Heat 5-8 tablespoon. of oil. Add chicken and cook, stirring, just until pieces separate and chicken is no longer pint. (Not long ... this is to velvet the chicken.) Drain into a sieve over a bowl. Return 1 tablespoon oil. Add celery, pea pods, mushrooms, cabbage and stir-fry for 2 minutes. Remove ginger pieces from chicken broth. Add broth to mixture. Bring to a boil. Return chicken to pan. Add water/cornstarch mixture. Cook, stirring until thickened. Serve over steamed white rice.
