Molasses Cookies

Perfect cookie dough for making gingerbread men.

1 c Sugar
1 c Shortening
1 c Molasses
1/3 c Water,Boiling
1 T Vinegar
5 c Flour
2 t Sodium Free Baking Soda
1 t Ginger
1 t Cinnamon

Cream shortening and sugar. Add molasses, water and vinegar. Combine dry ingredients. Beat into creamed mixture. Cover and chill for at least 3 hours. On a lightly floured surface, roll dough to 1/4 inch thickness. Cut out cookies with cookie cutter on glass dipped in flour. place on greased baking sheets. bake at 375 for 8 minutes or until edges are lightly browned.
