Minestrone

A vegetarian meal that is low in fat and high in fiber, in addition to being low in sodium.

10 c Water
1/2 lb Cannellini Beans
1/2 lb Garbanzo Beans
1/2 c Onion,Chopped
1/2 c Carrot,Diced
1 c Zucchini,Sliced
2 ea Garlic,Crushed
1 t Basil
1 t Oregano
1 c Plum Tomatoes,Chopped
1/2 c Frozen Green Beans,Italian Style

Soak beans overnight and drain. Place in large soup pot or Dutch oven with water and simmer 1 hour. Sauté onions, carrot, zucchini and garlic until tender. Add to soup with other ingredients and simmer 1 to 1 1/2 hours, until beans are tender. Add additional water as needed. Garnish with Parmesan cheese, if desired
