Mexican Pizza
We had these toppings on the Mexican pizza crust and they were quite a hit.
2 c Black Beans,Dry Bean Cooked Or Canned, No Salt Added
1/2 c Red Onion,Chopped
1/2 c Green Bell Peppers,Chopped
1 t Cumin
1 T Chili Powder
1 c Plum Tomato,Chopped
1 Jalapeno,Chopped
1/2 t Garlic,Minced
2 c Spinach,Chopped
1 c Swiss Cheese,Shredded
Mash beans. Stir in red onion, pepper, cumin and chili powder. Spread over prebaked pizza crust. Combine tomato, jalapeno and garlic. Spread over beans. Cover with chopped spinach, then sprinkle cheese over top. Bake at 450 until warm through and cheese is melted, about 10 minutes.
