Mexican Chicken Stew
A stew full of chicken and chunky vegetables, flavored with Mexican spices. Cooked while you are gone in the crockpot, it gives the house a nice aroma to come home to. If you want a little more substantial meal, you can serve it over rice. Another good way to use fresh veggies.
