Jerk Rotisserie Syle Chicken

A simple recipe for jerk-flavored chicken. You could also cook this on the grill or a rotisserie if desired. Make sure you use jerk seasoning without salt like that from Spice Hunter or make your own from the recipe below.

1 Roasting Chicken
2 t Garlic Powder
1 t Paprika
1/2 c Onion
3 T Jerk Seasoning

Process the onion in a food processor or blender until very finely chopped. Rub it into the chicken, inside and out. Combine the paprika, garlic powder and Jerk Seasoning. Rub all over the whole chicken and allow the chicken to marinate for at least 2 hours. Roast in oven at 350 degrees Fahrenheit for 1 to 1 1/2 hours or grill over indirect heat, until done.
