Jack Daniel's Fruit Cake

This recipe was developed using one on the Jack Daniel's website. While their's called for all dried fruits, this one uses the more traditional candied fruit. It contains more batter between the fruit and nuts than most fruit cakes, which some may say is a good thing and some may not.

1 c Unsalted Butter
2 c Brown Sugar
1 c Egg Substitute or 4 large Eggs
3 c Flour
2 t Sodium Free Baking Soda
1/3 c Jack Daniel's Whiskey
1/2 c Orange Juice
3 c Pecan Halves
6 c Mixed Candied Fruit

Cream together margarine and brown sugar until light and fluffy. Add eggs, beat well. Stir together flour and baking soda. Add flour to butter mixture alternately with whiskey and orange juice. beat on low speed until well blended. Stir in fruit and nuts. Grease 3 8 1/2 by 4 1/2 inch loaf pans. Line bottoms with waxed paper. Spoon mixture evenly into pans. Bake about 1 hour 15 minutes at 325, or until toothpick inserted in center comes out clean. Cool on rack. Remove from pans. Wrap each cake in cheesecloth. Soak cheesecloth with additional whiskey. Wrap tightly in plastic wrap, then aluminum foil. Store in refrigerator 2 weeks before serving.
