Italian Veggie Noodles
A kind of poor man's lasagna, quick to throw together for lunch or dinner, but full of veggies and nutrition.
8 oz whole wheat pasta, uncooked
1 1/2 c low fat ricotta cheese
2 c zucchini,chopped
1 c Red Bell Peppers,Diced
2 c mushrooms chopped
1/2 c fresh herbs,chives, basil and parsley are all good
Cook noodles, drain and return to pot. Add other ingredients and cook for 5-7 minutes until warmed.
