Italian Vegetable Casserole

A meatless Italian meal, relatively low in the things most people should be avoiding anyway. Summer would probably be a better time for this, but I wanted it now. And it fits my lower carbohydrate life, allowing Italian food without the bread or pasta

1 Eggplant,Sliced
1 Red Bell Peppers,Cut In Rings
1 Onion,Sliced
16 oz Mushrooms,Sliced
2 Zucchini,Sliced
3 c Low Sodium Spaghetti Sauce
1 c Mozzarella,Shredded
2 T Olive Oil

Brush veggies with olive oil. Grill or pan fry until soft. Spray a 9x13 baking dish with non stick spray. Spoon enough sauce in the bottom to cover. Layer veggies adding sauce every couple layers. Finish with sauce and then cheese. Bake at 400 until hot through and cheese is browned.
