Italian Pasta Salad

I was looking for something a little different in a cold meal during one of our heat waves and came up with this. All you need to add is a burger (go back and dig up the Italian burger recipe) or chicken breast marinaded in Italian dressing to make a complete meal. The dressing really is about 6 tablespoons of the low sodium Italian dressing recipe from a couple of week ago added to the mayo, so if you have some of that on hand, skip the extra measuring and just put it in place of the other dressing ingredients.

1 lb Elbow Macaroni,Or Other Shaped Pasta
1 lb Frozen Mixed Italian Vegetables
1/2 c Low Sodium Mayonnaise
2 T Olive Oil
1/4 c Vinegar
1 T Dijon Mustard
1/4 t Garlic Powder
1/4 t Onion Powder
1/2 t Sugar
1/2 t Basil
1/2 t Oregano
1/2 t Rosemary

Cook pasta until done, drain and cool. Cook veggies until just crisp, drain and cool. Whisk together remaining ingredients. Pour over pasta and veggies and stir to coat.

Yield: 8 Servings
