Italian Kitchen Sink Soup
OK, that's not the name this had when I found the original recipe. But it sure seems like it has everything in it. In truth, it's a heartier version of the Italian Wedding Soup that's become popular enough for Campbell's to make a version. This one is truly a meal in a bowl. And it's low in sodium, fat and potassium, but high in fiber and vitamins.
4 c Water
2 c Onion,Chopped
2 Red Potatoes,Diced
1 c Dry Great Northern Beans
1/2 c Carrot,Sliced
1/2 c Mushroom,Sliced
1/2 c Pearl Barley,Uncooked
1/2 lb Round Steak,Cubed
2 c No Salt Added Tomatoes
2 c Low Sodium Beef Broth
1 T Italian Seasoning
2 ea Garlic,Minced
1 c Zucchini,Sliced
1 c Spinach,Torn Into Bite Sized Pieces
1/2 c Samll Pasta
1 T Rosemary
1/2 t Black Pepper
Combine first 12 ingredients in a large electric slow cooker. Cover with lid, and cook on high for 6 hours or low for 10-12 hours. Add remaining ingredients, cover and cook on high-heat setting an additional 30 minutes or until beans are tender.
