Irish Soda Bread

Not quite a traditional soda bread with the baking powder, butter and eggs, however it is lighter and tastier than it would have been without these. Buttermilk helps to give this crusty loaf a good flavor.

4 c Flour
4 T Sugar
1 t Sodium Free Baking Soda
1 T Sodium Free Baking Powder
1/2 c Unsalted Butter,softened
1 c buttermilk
1 egg
1/4 c Unsalted Butter,melted

Preheat oven to 375 degrees F. Lightly grease a large baking sheet. In a large bowl, mix together flour, sugar, baking soda, baking powder and butter. Stir in buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. Brush loaf with melted butter. Use a sharp knife to cut an 'X' into the top of the loaf. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes.
