Honey Wheat Bread


This recipe turned out very well. For some reason it was lighter than a lot of homemade bread, was just sweet enough and didn't collapse on top as happens sometimes when you leave out the salt. I can't help but wonder if the lower than usual amount of yeast had anything to do with that. I'd been reducing the yeast in some recipes, but not usually this low. Time for some more experimentation. We may be on to something here.

1 cup plus 1 T Water
1 1/2 T Unsalted Butter
1/4 c Honey
1 1/2 c Bread Flour
1 1/2 c Whole Wheat Flour
1 T Nonfat Dry Milk Powder
1 t Yeast

Place ingredients in bread machine pan in order specified by the manufacturer. Process on whole wheat cycle
