Hollandaise Sauce

There is no way this can be considered good for you. But our version has less cholesterol and less fat than the traditional ones. So maybe you'll want to splurge once a year for the first batch of fresh asparagus. This easy version can also be made in a blender.

1/4 c White Vinegar
1 Bay Leaf
6 Peppercorns
3/4 c Egg Substitute
1/2 c Unsalted Margarine,Melted

Place the vinegar and spices in a small pan and boil until reduced to about a tablespoon of liquid. Remove spices and add vinegar to food processor container with eggs. Cover and turn on to high. Slowly add margarine through feeder tube. Serve while warm.
