Grilled Veggie Subs

I particularly like these on the foccacia bread, but they are also good on homemade rolls. You could add a slice of chicken or other leftover meat if you aren't into the all-veggie thing, but i don't see the need. Feel free to vary the veggies as desired. I usually sprinkle a little homemade italian dressing on them too. (if you can't find the dressing recipe on the archive page, write me and i'll email it to you.) be prepared with extra napkins.

4 sl Red Onion
1/2 c Mushrooms,Sliced
1 Zucchini,Sliced
1/2 Eggplant,Sliced
1 Tomato,Sliced
4 sl Swiss Cheese
2 T Olive Oil

Brush veggies with oil. Grill or saute until soft. Pile on rolls or foccacia bread. Top with slice of Swiss cheese. Run under the broiler until cheese melts.
