Graham Cracker Muffins

I found this recipe on allrecipes.com while looking for something a little different for breakfast. They were very popular. The graham crackers make them higher in sodium than many of the quick bread recipes I have, but still much less than commercial muffins.

2 c graham crackers,Crushed
1/4 c Sugar
2 t Sodium Free Baking Powder
1 c Skim Milk
1 egg,slightly beaten
2 T honey

Preheat oven to 400 degrees F. Grease 12 muffin cups or line with paper muffin liners. In a large bowl, combine cracker crumbs, sugar and baking powder. Stir in milk, egg and honey; mixing just until moistened. Spoon batter into prepared muffin cups. Bake in preheated oven for 15 to 18 minutes, until a toothpick comes out clean. Let stand for 5 minutes.
