Egg Salad

You can make this with a regular hard boiled egg also, of course. But the point of this was to see if it was possible to make a cholesterol free egg salad using egg substitute. And the result was quite gratifying. I, for one, will be using this for all my egg salad sandwiches. It is still rather high in fat with the mayonnaise though.

1/4 c Egg Substitute
1 T Low Sodium Mayonnaise
1 t Mustard
1/2 t Minced Onion
1/4 t Celery Seed

Place the egg in a bowl and microwave until done, about 1 minute. Break up with a fork and combine with remaining ingredients.
