Coffee Cake Muffins

These muffins are relatively low fat as well as being low sodium ... and they taste like old fashioned coffee cake. By the way, if you are using paper muffin pan liners, you can spray them lightly with non-stick vegetable spray before adding the batter and they will be a lot easier to peel off.

1 1/2 c Flour
1/2 c Sugar
1/4 c Unsalted Margarine
1/4 c Egg Substitute
1/2 c Skim Milk
2 t Sodium Free Baking Powder
1/2 c Brown Sugar
2 T Flour
2 t Cinnamon

Stir together flour, sugar and baking powder. Cut in margarine until mixture resembles course crumbs. Combine milk and egg substitute. Add to dry ingredients and stir until just mixed. Stir together brown sugar, 2 tablespoons flour and cinnamon. Spoon half the batter into 12 greased or paper lined muffin cups. Sprinkle with half the topping. Top with remaining batter and then remaining topping. Bake in 375 oven for 20-25 minutes.
