Christmas Rice


An alternative to cranberry sauce ... or just a nice sweet dish for your holiday.

2 c Water
1 1/3 c Sugar
2 c Cranberries
1 1/3 c Instant Rice
1/4 t Cinnamon
1 Apple,Peeled And Sliced

In a saucepan combine 1/2 cup of the water and 1 cup of the sugar. Bring to boil. Add cranberries, return to boil, reduce heat and simmer 10 minutes or until most of the berries have popped. Add rice, cinnamon and the remaining water and sugar. Bring to boil. Reduce heat, cover and simmer 5 minutes. Remove from heat, stir in apple. cover and let stand for 10 minutes.
