Chickpea Salad
A nice combination of salad ingredients set off by a fresh homemade dressing. Serve over lettuce leaves. use either cooked dreid chick peas or no salt added canned ones like Eden Organic.
2 c Chick Peas,Cooked
1 c Green Bell Peppers,cut in strips
1/4 c Onion,Chopped
1 c Tomatoes,cut in thin wedges or 12 cherry tomatoes
2 T Fresh Parsley,Chopped
DRESSING
1 T Lemon Juice
2 T olive oil
3 T Water
1/8 t cayenne pepper
1/4 c Rice Vinegar
2 t fresh basil
1/2 t Dry Mustard
Place chickpeas in a non-metal bowl. Combine dressing ingredients and pour over them and marinate in the refrigerator for an hour or two. Add rest of ingredients, toss well and serve.
