Chicken Creole


This recipe is from the Louisiana Light cookbook and this was the first recipe we tried from it. It went over very well. Somehow Cajun food seemed appropriate for a hurricane.

1/2 c Onion,Chopped
1 c Green Bell Peppers,Chopped
2 c Tomatoes,Chopped
1/2 t Garlic Powder
1 t Thyme
2 Bay Leaf
2 T Parsley
1/4 t Black Pepper
1/8 t Cayenne
2 Boneless Chicken Breasts Cubed

In a heavy saucepan over high heat, cook the onion and bell pepper, stirring, until they begin to color. Add the remaining ingredients. Cover and simmer until chicken is cooked through, 10-15 minutes.
