Chicken and Dumplings


Classic comfort food ... any time of year, but especially as the weather get colder. You can also make the dumplings using 2 cups of the baking mix rather than the flour, baking powder and shortening called for here.

1 1/2 c Chicken,Cooked And Cubed
3 c Low Sodium Chicken Broth
3 c Water
6 Carrot,Sliced
6 Potatoes,Peeled And Cubed
1 Onion,Chopped
------- Dumplings
2 c Flour
1 T Sodium Free Baking Powder
6 T Unsalted Margarine
2/3 c Skim Milk

Place chicken, broth, water and vegetables in a large pan. Bring to boiling. To make dumplings, stir together dry ingredients. Cut in shortening until mixture resembles course crumbs. Stir in liquid until dough hold together in a ball. Drop dumplings on top by tablespoonfuls. Reduce heat and simmer uncovered for 10 minutes. Cover and simmer 10 minutes more.
