Cherry Winks

This recipe was a favorite that my Mother made every Christmas. It's a little higher in sodium than most of the others here because of the corn flakes. If you check your local health food store you may be able to find a low sodium corn flake. If not, splurge, they're worth it.

3/4 c Unsalted Margarine
1 c Sugar
1/2 c Egg Substitute
2 T Milk
1 t Vanilla
1/2 c Raisins
2 1/4 c Flour
2 t Sodium Free Baking Powder
1/2 c Walnuts,Chopped
1 1/2 c Corn Flakes
15 Maraschino Cherries,Cut In Quarters

Cream margarine and sugar. Add eggs, vanilla and milk and beat well. Stir together flour and baking powder and add to mixture. Stir in fruit and nuts. Form into 1 inch balls. Roll in corn flake crumbs. Flatten slightly. Top each cookie with a quarter cherry “wink”. Bake at 350 for 10-14 minutes until lightly browned.
