Caramel Apple Dessert

We had this for Thanksgiving (and for quite a while after). It was something my wife found that sounded good to her and I have to admit she was right.

1/4 c Unsalted Peanuts
2 c Vanilla Wafers,Crushed
1/3 c Unsalted Butter,Melted
8 oz Fat Free Cream Cheese
8 oz Cool Whip
1/4 c Sugar
3 1/4 c Skim Milk
2 sm Vanilla Pudding
1/2 c Caramel Ice Cream Topping
2 Apples,1 Red And 1 Green, Chopped

Mix wafer crumbs and butter. Press into bottom of 13 x 9 pan. Beat cream cheese, sugar and 1/4 cup milk until blended. stir in 1 cup Cool Whip. Spread over crust. Beat pudding mix and remaining milk with whisk for 2 minutes. Stir in 1/4 cup caramel topping. Pour over cream cheese layer. Top with remaining Cool Whip. Refrigerate 5 hours or until firm. Top with apples and nuts. Drizzle with remaining caramel topping.
