Broccoli Pasta Sauce
A vegetable based sauce for pasta, featuring fresh broccoli, peppers and tomatoes. Hint: To remove skin from tomatoes drop tomatoes in boiling water for 30 seconds to 1 minute. Then place them in cold water for couple minutes, then skin can be removed
2 c Broccoli Florets
Place broccoli in a pot of water; cover and let boil for 5-6 minutes. Drain water and set aside. Place oil and garlic in large skillet., brown garlic on medium-low until light brown. Add wine and green pepper and cook 6-7 minutes over medium heat. Add the tomato, black pepper, Parmesan cheese and Italian seasoning. Cook 15 minutes, uncovered on medium heat, stirring often. Add the broccoli and mushrooms. Cook 5 minutes on medium heat, covered. Stir often. Remove from heat and serve over pasta.
