Braised Pork Chops And Cabbage

This was kind of a throw together when I discovered an overlooked cabbage in the vegetable bin. It provides great, filling taste and lots of nourishment without needing a single thing to make a full dinner.

2 T olive oil
4 Boneless Pork Loin Chops
1/4 t Black Pepper,Fresh Ground
1 c Onion,finely chopped
4 c Cabbage,finely shredded into coleslaw-size piece
1 c carrots,sliced into julienne strips
1 ea garlic,minced
3/4 c apple cider
3 sm Potatoes,sliced 1/4-inch thick

In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Season pork chops with pepper. Cook until golden brown, about 5-7 minutes per side. Remove pork chops from the pan. Reduce the heat to medium-low. Add remaining tablespoon oil, onion, cabbages, carrots, and garlic. Cook until the cabbage has wilted, about 10 minutes. Raise the heat to medium-high. Add apple cider and 1 cup water; bring to a boil. Add the potatoes; reduce the heat to a simmer. Cover, and cook until the cabbage and potatoes are almost tender, about 20 minutes. Return the pork chops to the pan; cover, and continue cooking until the pork is just cooked through and the potatoes are tender, about 10 to 15 minutes more.
