Blue Cheese Dressing 2

Bridget sent me a new recipe for blue cheese dressing to go with the Buffalo wings. As she pointed out, it is important to use a blue cheese that is moderate in sodium. She have found one, Rosenborg Extra Creamy Danish Blue Cheese, that has 220 mg of sodium per oz. The lowest one I've seen here is 300 mg. She said "I've developed a new recipe that comes out very thick and creamy. The secret: soft tofu. I saw this mentioned in a cooking magazine once as a non-dairy alternative for making Caesar dressing, and I decided to try it. It was terrific! I found a brand (Nasoya) that has zero sodium, so this really helped bring down the sodium level of the dressing."

2 oz Blue Cheese
6 oz Sour Cream
4 oz Tofu
2 oz Mayonnaise

Combine all the ingredients in a food processor and process until very smooth. (For a thinner dressing, use less tofu.).

Yield: 12 Servings
