Apple Cake


This recipe comes form my mother. It was one of may favorites for years and it doesn't suffer at all from having the salt left out.

1 c Oil
2 c Sugar
3/4 c Egg Substitute
2 1/2 c Flour
2 t Sodium Free Baking Powder
1 t Sodium Free Baking Soda
1/2 t Cinnamon
1/2 t Nutmeg
1 t Vanilla
3 c Apples,Peeled And Chopped

Mix oil and sugar together, add egg substitute. Sift together flour, baking powder, soda, cinnamon and nutmeg; add to sugar mixture. Stir in vanilla; fold in apples and nuts. Pour into 9x13 pan. Bake at 350 until knife inserted in center comes out clean, about 1 to 1- 1/2 hr. Dust top with powdered sugar if desired.
