Greek Fish Stew

This is a soup to warm you on a cold night. A slice of bread is all that's needed to make it a meal.

4 oz Orzo,Or Other Small Pasta
1/2 c Onion,Chopped
1/2 t Garlic,Minced
1 t Fennel Seed
2 c No Salt Added Tomatoes
2 c Low Sodium Chicken Broth
1 T Parsley
1/2 t Black Pepper
1/4 t Turmeric
12 oz Cod Fillets,Cut In 1" Cubes

Cook pasta according to package directions. Drain and set aside. In a large non-stick saucepan sprayed with vegetable oil spray cook onions garlic and fennel seed until onion is tender. Add tomatoes, broth and spices. Reduce heat and simmer for 10 minutes. Add fish and simmer until fish is cooked through, about 5 minutes. Divide pasta among 4 bowls. Ladle soup over pasta.

Yield: 4 Servings
